Instructions

1: In a small bowl, mix together gelatine and water and set aside for 10 minutes.

2: In a pot on medium heat, whisk together cream and milk until it starts to scald.

3: In a bowl, cream together yolks, sugar, salt, and ube extract. Slowly whisk in the heated cream into the eggs to temper.

4: Return the egg mixture back to the pot and heat the mixture to 180F.

5: Place the chocolate and gelatine in a bowl and strain the egg mixture overtop.

6: Cover with a lid for 1 minute, add butter and then emulsify using a hand blender.

7: Cover and chill in the fridge overnight.
