These airy and squishy homemade ube marshmallows are perfect for s'mores or adding into hot cocoa for a delicious vanilla-nutty flavor. The recipe combines gelatin, sugar, and a touch of ube extract for a unique treat.
Bloom gelatin and water in a stand mixer bowl.
In a small bowl, combine confectioner sugar and corn starch.
Using a non-stick spray, coat the inside of a 9x9 pan and generously dust with the corn starch mixture.
In a small pot, combine granular sugar, salt, water, and corn syrup. Bring to 240°F on medium-low heat.
Using the stand mixer with the whisk attachment, slowly pour in the sugar syrup into the gelatin on medium-low speed.
Add ube extract and food colouring. Increase the mixer speed to high and whisk for 10 minutes.
Pour the marshmallow into the greased pan. Flatten the top with dampened hands. Leave to dry uncovered overnight.
Carefully separate from the pan using a spatula and transfer to a cutting board dusted with corn starch mixture.
Generously dust the top and slice into desired shapes with a greased knife, dusting all sides to prevent sticking.
Store in an airtight container for up to two weeks.
