Delicious ube cheese pandesal, a type of bread roll commonly enjoyed during breakfast in the Philippines. Soft and flavorful, these rolls are filled with ube jam and cheddar cheese, making them a perfect treat to enjoy warm.
Place ube powder in a bowl and rehydrate with hot water. Mix until combined.
In a large bowl sift together flour, sugar, and salt. Mix until combined.
Heat milk to 90°F. Pour milk, oil, and egg into the dry mixture. Mix until combined.
Add yeast, hydrated ube, and ube extract. Mix until combined (the dough will be sticky).
Remove the dough from the bowl and place it onto your work space.
Rub some oil on your hands to keep them from sticking to the dough and knead for 10 minutes, applying more oil as needed.
Form the dough into a ball and place it into a lightly oiled bowl. Cover with a kitchen towel or plastic wrap and proof in a warm space for 1 hour.
Punch the dough down and place it back onto your work table. Divide the dough in half then roll it into logs.
Using a knife or bench scraper, divide each log into 6 equal pieces and roll them into balls.
Flatten each ball and spoon ube jam into the center of the dough, placing a cubed piece of cheese on top of the jam.
Pinch the ends together and form it back into a ball. Roll the top of the bun in breadcrumbs.
On a baking sheet lined with parchment paper, place the buns on the sheet spaced 1 inch apart.
Cover with a kitchen towel or plastic wrap and proof for 30 minutes.
Preheat oven to 350°F and bake the buns for 20 minutes or until golden brown.
