Truffle Yolk Raviolo are little pockets of heaven filled with rich and creamy goodness, featuring a filling of ricotta and truffles tucked inside delicate pasta dough.
In a bowl, combine ricotta and truffles and transfer it into a piping bag.
Roll the pasta dough to a thickness of 6 on the KitchenAid.
Use a ring mold to create a mark on the pasta. Pipe a nest inside the marked pasta and carefully lay the yolk inside.
Cover the ricotta nests and yolk with another sheet of pasta and use the ring mold to cut out the raviolo. Poke holes around the raviolo, push the trapped air out and pinch the ends to seal.
Cook the raviolo in salted water. While the pasta is cooking, melt butter in a pan until it starts to brown. Once the pasta is floating, add it to the butter with 2 tbsp of pasta water. Baste the pasta for 15 seconds.
Plate up the pasta and finish with microplaned parmesan.
