This delicious spiral ravioli recipe combines flour, eggs, ricotta, and fresh herbs to create a delightful pasta dish. It's perfect for those who love making their own pasta from scratch.
Place the flour on a clean work surface and make a well in the center. Pour the eggs and olive oil into the center of the well, and using a fork, break the egg and start to gently whisk them.
Draw in the flour a little at a time and continue to combine with the fork.
Once everything starts to come together, knead the dough with your hands for 10 minutes. Vacuum seal the dough or cover with plastic wrap and allow to rest for 30 minutes.
In a bowl, combine ricotta, mint, orange zest, and salt. Transfer the mixture into a piping bag.
Working in batches, roll the dough out to the #6 thickness on the KitchenAid pasta attachment. Cut the pasta sheets into 16-inch lengths.
Starting 1/2-inch from the end, pipe the ricotta along the center of the sheet, fold the pasta in half, and trim the edge with a crinkle cutter.
With the seamside up, roll the pasta to make a spiral.
Simmer in salted water for 4-5 minutes. Enjoy!
