Speck-Wrapped Cod and Spot Prawn Mousse
30 mins prepServes 4
A delightful recipe transforming spot prawns into a luscious mousse, piped onto cod and wrapped in smoky speck. The dish combines sweetness from the prawns and smokiness from the speck for an exquisite flavor.
1: In a blender, add prawns, egg, 1 tsp salt, and zest. Blend until smooth, then add cream and blend until combined. Strain the mousse and transfer it to a piping bag.
2: On a clean work surface, lay two large pieces of overlapping cling wrap. Place overlapping pieces of speck on the lower half of the cling wrap and lay the cod on top. Season the cod with salt.
3: Pipe the mousse on top of the cod and spread it evenly with a palette knife. Roll everything tightly into a log using the cling wrap and tie the ends.
4: Place the fish on a perforated pan and insert an internal thermometer. Steam the fish at 212F with top and bottom heat until it reaches 140F. Remove the cling wrap and pat the fish dry with paper towels.
5: Sear the fish on all sides in a pan with oil over medium-high heat. Rest the fish for 5 minutes before carving.
