Pulled Pork Stuffed Potatoes

1: Preheat the oven to 400°F.

2: Peel the potatoes and scoop out their centers, leaving 3/8 inch of potato around the outside. Keep the potatoes in water to prevent oxidizing.

3: Heat a pan on medium-high heat with pork fat. Add the pulled pork and sauté until it’s slightly crisp. Then add the BBQ sauce and mix well. Fill the potatoes with the pork mixture.

4: Heat a saucer or dutch oven with the pork fat and sauté the onions with salt on medium-high heat for 5 minutes or until they start to caramelize.

5: Deglaze the pan with white wine, add rosemary and reduce the liquid by half. Then add stock and potatoes and bring it to a simmer.

6: Bake the potatoes in the oven for 20 minutes, then cover them with tin foil and cook for another 40 minutes.

7: Sprinkle parsley over the potatoes, then add caramelized onions, spoon some sauce, and finish with more parsley.
