1: Mix together 3/4 cup of cream and gelatine and set aside to bloom for 5 minutes.

2: In a small pot on medium heat, combine remaining cream, Parmesan, and salt until it comes to a simmer.

3: Whisk in the gelatine and bring the mixture back up to a simmer.

4: Pour the cream into desired molds and place it into the freezer for 12 hours.

5: Gently remove the mousse from the mold and place it onto a serving plate to thaw.
