These Mesquite Gochujang Ribs are perfect for those who enjoy a little funk and heat in their food! With a blend of gochugaru and various other ingredients, these ribs offer a unique flavor. They are smoked for several hours to enhance their taste, making them a must-try for BBQ lovers.
Preheat the smoker to 180°F for 20 minutes.
Remove the membrane from the ribs and season with a gochugaru blend and salt.
Smoke the ribs for 3 hours. After the first hour, spray the ribs with apple cider vinegar every 15 minutes.
In a saucepan, combine ketchup, white vinegar, 1/3 cup of apple cider vinegar, soy sauce, garlic powder, sugar, gochujang, 1 teaspoon of salt, and pepper. Once the mixture comes up to a simmer, set it aside to cool completely.
Place a large piece of foil on the countertop, then place the rib bone-side up and wrap it, leaving one end open. Pour in the apple juice and seal the open end. Repeat this process with the other rib.
Return the ribs to the smoker and cook for another 2 hours.
Increase the smoker temperature to 225°F, open the foil, brush the glaze over the ribs, and then remove them from the foil. Place the ribs directly on the smoker, meat-side up, and brush the glaze over the top. Smoke for another 30-60 minutes.
