A festive twist on the classic tiramisu, using Baileys for a holiday flavor. This delicious dessert layers espresso-soaked ladyfingers with a rich mascarpone cream and is topped with cocoa powder. Perfect for Christmas celebrations!
Combine the espresso and Baileys in a bowl and set aside.
In a heatproof bowl, whisk together the sugar and egg yolks. Place the bowl over a double boiler and cook the mixture, whisking continuously, for 10 minutes. Once thickened, remove from heat and let cool slightly.
Whisk in the mascarpone until smooth.
In a stand mixer with the whisk attachment, whip the cream until stiff peaks form.
Whisk half of the whipped cream and vanilla extract into the mascarpone mixture, then gently fold in the remaining whipped cream.
Quickly dip 14 ladyfingers into the Baileys mixture and arrange them in a single layer in a 9x9 pan. Spread half of the mascarpone mixture evenly over the ladyfingers.
Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
Dust the top with cocoa powder, cover with plastic wrap, and refrigerate overnight to set.
