Delicious fried sunchokes seasoned with dehydrated black garlic and salt, perfect for a crunchy snack. The process involves washing, slicing, frying, and seasoning the sunchokes for a satisfying chip experience.
Wash the sunchokes with cold water to remove any dirt that might be stuck on.
Using a mandolin, slice the sunchokes 1.5mm-2mm thick and place them into a bowl.
Fill up a pot halfway with vegetable oil and heat to 350°F.
Working in small batches, lay the sunchokes one at a time into the oil (make sure not to overcrowd the pot).
Using a slotted spoon, stir the sunchokes to keep them from sticking to each other.
Once the sunchokes have a light golden colour, remove them from the oil and place them onto a baking sheet lined with a cooling rack.
Season the sunchokes with salt and dehydrated black garlic powder or desired seasoning.
 Enjoy!
