A flavorful citrus marinade enhances the natural beefiness of flank steak, resulting in a tangy and spiced dish perfect for grilling. This steak can be enjoyed on its own or in tacos.
In a large bowl, combine soy sauce, olive oil, lemons, limes, oranges, garlic, cumin, paprika, and oregano.
Divide the steaks and marinade into 2 chamber vacuum pouches. Reserve 1 cup of the marinade for basting.
Seal the steaks on strong vacuum and leave in the fridge to marinade for 12 to 24 hours.
Remove the steaks from the pouches and pat dry using paper towels. Let them temper at room temperature for 10 minutes.
Grill the steaks at 500°F for 5-6 minutes or until the internal temperature reaches 125°F. Baste the steaks with the marinade once they have been flipped.
Rest the steaks for 6 minutes on a plate with the remaining marinade.
Thinly carve the steaks against the grain and spoon some of the marinade over top.
