A comforting and delicious bowl of beef noodle soup perfect for chilly weather. This dish features a rich broth simmered with spices, tender beef, and cooked noodles. The aroma of the herbs and spices creates a warm atmosphere in your home, making it a delightful experience to enjoy.
Preheat the oven to 300F and place the rack on the first shelf with rear and top heat.
Toast cloves, anise, cardamom, cinnamon, coriander, fennel, and peppercorn in a pot over medium-low heat until fragrant. Then, transfer everything into a spice bag with the bay leaves.
In a pot, combine the beef and water, and heat over high heat. Once the water comes to a boil, strain and rinse the beef with cold water. Clean the pot and return it to the stove.
On medium heat, sauté onion, ginger, whites of the scallion, garlic and oil for 2 minutes. Then, add tomato paste and sauté for another minute. Add shaoxing wine, light soy, dark soy, stock, sugar, and spice bag. Once the stock comes to a simmer, cover it with a lid and braise it for 2 hours.
Remove the beef and strain the stock into another pot. Taste the stock for seasoning.
Cook the noodles in boiling water according to the manufacturer’s instructions and blanch the bok choy for 1 minute.
Place the remaining soy sauce in a soup bowl, add the noodles, and stock and top it with beef, bok choy, scallions and cilantro. Enjoy!
