These cherry smoked char siu chicken wings are super tasty and easy to make. Just marinate them overnight and smoke until cooked, then glaze for extra flavor.
In a mixing bowl, combine brown sugar, Chinese 5 spice, garlic powder, fermented red bean curd, light soy sauce, hoisin, honey, oyster sauce, red wine, Shaoxing wine, and orange juice and zest.
Reserve 1/4 of the sauce in a container for glazing and store it in the fridge.
Mix together the remaining sauce and chicken, then transfer the mixture into an airtight bag and store it in the fridge overnight.
Preheat the smoker to 180°F for 10 minutes.
Smoke the chicken for 1 hour or until it reaches 160°F. Then, remove the chicken and increase the heat to 425°F.
Return the chicken to the smoker and brush the glaze over the top. Cook for another 3 minutes to crisp up the skin.
Let the wings rest for 5 minutes, then garnish with scallions.
