This Cherry Chocolate Cremeux is a luscious dessert made with egg yolks, sugar, cherry liquor, and both milk and dark chocolate. It's thickened over a water bath and can be served on its own or with ice cream.
In a heatproof bowl, whisk together yolks, sugar, cherry liquor, and milk.
Place the bowl onto a pot of simmering water. Stir constantly with a spatula or wooden spoon until the mixture is thickened and has reached a temperature of 165F-180F.
In a separate bowl, add milk chocolate, dark chocolate, and butter.
Strain the thickened egg mixture into the chocolates and stir until combined.
Place the cremeux into a container and leave in the fridge to completely cool.
Serve with ice cream or use as a filling for tarts. Top with flaky sea salt for a delicious sweet and salt contrast.
