Instructions

1: Preheat the Precision Oven to 225°F with 100% steam.

2: Shred the potatoes using a box grater and transfer them into a bowl.

3: Add cold water and rinse the potatoes until the water is no longer cloudy.

4: Drain the potatoes and squeeze out as much of the water with a clean kitchen towel.

5: Season the potatoes with salt and Black & Bleu seasoning. Transfer the potatoes into a chamber vacuum sealer pouch and seal on strong vacuum.

6: Form the vacuum-sealed potatoes into a flat rectangle using your hands, then steam in the oven for 40 minutes.

7: Place the potatoes in the fridge to set overnight.

8: Carefully remove the potatoes out of the pouch and cut into desired shapes.

9: Deep fry at 350°F until golden brown.
